Update project versions to stable 1.0.0 release

Downgraded versioning information in `ReC.API.csproj` and
`ReC.Client.csproj` from beta versions to a stable `1.0.0`
release. Updated `<Version>`, `<AssemblyVersion>`,
`<FileVersion>`, and `<InformationalVersion>` fields
accordingly:

- `ReC.API.csproj`: Changed from `2.4.0-beta` to `1.0.0`.
- `ReC.Client.csproj`: Changed from `2.0.0-beta` to `1.0.0`.

These changes mark the transition from beta to stable
release versions for both projects.
