feat(license): Configure MediatR + AutoMapper with LuckyPennySoft license

- Read LuckyPennySoftLicenseKey from appsettings.json
- Set MediatR config.LicenseKey
- Set AutoMapper cfg.LicenseKey
- AddApplication now requires IConfiguration parameter
